In Oregon and many other places its best to harvest crab in months with R in them September through April. Crabbing can still be OK. Quality of meat can deteriorate and they molt ( shed their external shell) their meat shrinks enough to shed the external skin then they look simular to an albino crab as their shell hardens and it turns red again from iodine.
Virginia crabs are Blue Crabs and are prime from April to October. When they molt, their shells are soft but the meat remains firm and full. We batter and fry them(after cleaning) and eat shell and all.
