I live in Las Vegas and catch a lot of stocked trout in the 14''-24'' range. I have a bunch in the freezer. This size is typically too small to fillet, so I usually stuff and bake them. I need some other ideas for preparing them. The trout is delicious. When you bake it, the entire skeleton comes out in one piece. I learned this trick at the age of 8 by cold, burbling Southern California stream. UUUUUMMMM trout in tinfoil was awesome then. Tastes have changes obviously, since those bygone days so I fancy it up now. These five spices and cilantro, stuff it with green peppers onion and lemongrass with a dipping sauce and rice is Thai-style. These five different spices and parsley, stuff with garlic, cherry tomatoes and thin-sliced eggplant , with marinara and angel hair pasta on the side is Italian.
The problem is, my wife wants something different. She grew up in Michigan and is used to fried walleye. She wants Long John Silvers, I guess. Hard to re-create with a 14'' whole fish. I need help people.... HELP

Hey bill, here are a few recipe's that my family and I really enjoy. They are from the cookbook called Just Trout , they were compiled by a guide that worked on the Little Red River below Greers Ferry Lake in Arkansas. If you can find a copy (which is out of print) on ebay or Amazon it would be worth having it. There are some amazing recipes in it.

We have huge kokanee trout here at knik lake in Wasilla Ak. Here's one for sore eyes to see.

Happy to help bill. The books are hard to come by. We found 2 through abe books and gave a copy to each of our kids this past Christmas.
There are some fantastic recipes in it, grilled, baked, pan fried, and broiled. It also has a section on seasonings and sauces.
We have had the book for 30 years and still haven't tried all of the recipes but the ones we have done, I can say we haven't had a bad one.
We are heading to Arkansas to do a little maintenance on my place and will be doing a little trout fishing on the White River below Bull Shoals dam in 2 weeks. Hoping we can catch some big ones.
