Gulf Spanish Mackeral

Got out in the Gulf yesterday. The water was perfect. 1-1.5 all day and the Spanish were moving through. Here’s three...fish tacos tonight!

Yeah neverfish, they are bleeders! Make a mess of the fish cooler! Some say they are too fishy, but I like fish that taste like fish. I also like fish that taste like whatever you put on them. I guess I just like fish.

Fish shouldn’t taste like fish. Should just taste good. If fish you prepare tastes like canned tuna it’s not fresh. Fresh fish will not have the fishy flavor. Crab Bait is fishy.

I did not say fish should taste fishy. I said I like fish that tastes like fish. What should fish taste like Jeremy? Corn flakes? I think each different species has its own flavor, especially if you prepare it with a little butter and salt and pepper. Red snapper tastes different vs cod. Snook tastes different vs mackerel. Bluegill tastes different vs bass. King salmon tastes different vs steelhead. I think the difference in taste is a reflection of the fish’s diet and to a lesser extent water quality. That “fishy” taste you are talking about is either cadaverine or putrescine caused by the mishandling of the fish after it has been caught. As for Spanish mackerel, the flavor that is objectionable to some is most likely due to the oil content and whether one retains the skin on the filets. Just saying buddy. Thoughts?
