Like a lot of you I like bbq/smoke.
My question is how do you like it? Doneness? A lot of people swoon over "FALL OFF THE BONE". I prefer it to be "CHEW OFF THE BONE". Hard/impossible to get at bbq joints.
Your thoughts?

When I was living in the Rio Grande Valley, our men of our church were invited to come to Rio Grande City for a BBQ at their church. Now this wasn't a BBQ cooked in a smoker, or any modern convenience. it was old time BBQ.

These men were mostly Mexican descent and had dug a hole in the ground and build a large fire with mesquite wood. When that burned down to coals, they cut a whole beef in half, and wrapped each half with burlap and placed those on the coals, soaked it with sauce, and covered it up with soil and let it slow cook for hours. I don't remember how long it had been cooking but when they removed the beef and began slicing it, I have never tasted a better beef BBQ. it was the real thing, what folks did for BBQ 100 years ago in Mexico and on the border. Hot in temperature and free is good, other wise someplace in Texas near Lackland AFB was the best i ever had.

Hey Plum, you got that right. Texas does ,have ALOT of good BBQ joints. Granted, not ALL of the BBQ joints are gonna be great, but on the average , I think Texas has the best BBQ joints of any state. Just my opinion.

Saw, do you remember the name of the place near Lackland? They served briquets, half a chicken and a ton of bread on the side.

No brother. That's been 50 years ago.
My cousin lives in San Antonio now and we've gone to some good places there when I've visited him.
Sure do miss that good Texas BBQ that you can get every day in just about ANY city in Texas.

50 years ago? Thanks for the reminder!!!! At least i can remember Texas, Lackland, and good food. Not ready to throw in the towel yet.

Somewhere in between. When I smoke, sometimes I’ll cheat. Smoke for a few hours then finish in the oven at 250 degrees until it’s the texture I’m looking for.

Not sure what "in-between" means to you but when I said " chew " I was using
this definition .Al dente (Italian for “to the tooth”) is where pasta tastes and feels the best. It's chewy and firm.
