May I suggest a slow cool smoke or a low hot smoke for these. When ready, you can literally take a regular table knife to the flesh and spread it on crackers or bread. It will be superb! Never fails!
Cut into 3" segmants, bread or batter and fry! Tasty
The eel we catch in Georgia will bleed the next day AFTER you catch and eat it. Folks around here won't eat it.
Any fish freshen up somewhat as leftovers. Reheating in foil will alleviate this.
The eel is the only one we catch that bleeds the next day after cooked.
50 years ago we used to catch them in tidal rivers in NH while fishing for flounder and throw them away until someone taught me how to cook them. Skin them , cut it steaks, dip into egg then cornmeal and deep fry.
