I’ve recently been getting into targeting new fish on the fly rod. What do you guys think some of the most overlooked, un-fished for, or hard to catch fish in america or around the world? The weirder the better!

Stripers on a fly, awesome.
Around the world ? Hehehe.... you got ambition by the buckets, don't you ? Since we have no idea where you are, or whether salt or fresh... mucho ambiguity.
The latest craze my buddies back in Kansas tell me about is Carp on a fly... like 15lb+rs on a 6wt !
Here in Oregon, I am still after a Chinook. Have caught Coho and Steelhead, but have yet to entice a nookie on a fly.
Salt ? Haven't a clue, but gotta be kinda endless choices beyond the usual suspects like bonefish and tarpon.
Unusual ? Have heard Tilapia are fighters on the fly... again, wouldn't have a clue where to find them, except maybe Asia or Central America.
Bucket list fish, world-wide ?
There's a trout in Asia/Russia called the Taimen....often 4'-5', even more. Best story about 'em ? A guy fishing for them, reported finding the carcasses of two.... the 56" one was trying to swallow a 34" one... now that's a predator trout, huh ? Go big or die trying, seems to fit.
