Used to be able to buy Shark meat in the store here in Waterloo Iowa, not now. Meat was white with pink marbling . What kind of Shark is best eating ?
Thresher in my opinion, but it's not marbled with pink - it's dark meat, looks a lot like ahi. Very firm, good for grilling, just like beef.

I have tried to eat different kinds, can't do it. They have to be cleaned as soon as you get them in the boat because they pee out of their skin. They say the Mako is the best. IDK.

They're also warm blooded so they have to be bled, gutted and cooled immediately. Just like a deer or elk would. We get them in Alaska. Salmon sharks. We bleed, gut and get em back in the cold water so they don't spoil. It don't take long for them to spoil.

In mho, fresh (same day caught) Short Fin Mako, grilled in foil (open) with some butter, a squeeze of fresh lemon or lime juice, and a sprinkle of fresh ground black pepper......MMMMMMGOOD!!!
Gotta go with Spirit on this one and say thresher.
Black tip is very tasty IMO.
had them all , agree with Fly they pee thru their skin, best one definitely Mako and make sure you bleed it if you boat it. Funny aside, you can gut and fillet a Mako and leave the fillet on the board, when the kids come over asking for one of the teeth touch the center line of the fillet and it will jump all over the place, tell them it's not dead yet!

I agree every shark I've tried tasted like a old wet diaper smells. I've never tried it in any commercial place or fixed by natives.
