I put a brisket on the smoker this morning about 10:30 so it's been out there for about 12 hours now. I wrapped it in butcher paper about 5 hours ago. I'm gonna go shut off the smoker and leave it out there over night, wrapped. It's not a whole brisket, it's a chunk, maybe 4 pounds or so. I'll let y'all know tomorrow how it turned out. I've said on here before - I don't know much about doing brisket, but I'm learning. The last one I did, last summer, turned out pretty damn good - at least everyone said it did, and I was pretty happy with it.
Making me hungry visualizing it. Sure sounds good.
Last post dude. I'm going to bed - I'll check on it the morning. Been a rough day - most of it spent at the vet - got a sick doggy. I'm gonna go lay with her, try to give her some comfort. She probably just wants to be left alone with her misery. I know how she feels.

Oh my. The brisket was extraordinary, it even had the dog eating a little bit of it, which is good cause that's what was wrong with her - she had a bad case of tummy ache, foamy vomiting and bloody diarrhea - and absolutely no interest in food. But she's feeling lots better. Still wants to sleep a lot, but that's ok - she's old just like me, so I sympathize. We had brisket, bacon mac-n-cheese, greens and cornbread. I hurt myself. Anybody ever make galettes? Way easier than pie and just as good in my opinion. I'm making one with pears and blueberries and cream cheese today - was gonna do it yesterday to go with the brisket but that just didn't work out and I probably wouldn't have been able to enjoy it I was so full from that meal. It will be good today.
Sounds like you did it low and slow, Spirit. That's the secret to good brisket--breaks down the connective tissue. Your post aroused my hunger!
What kind of wood do you use to smoke Spirit. I get hickory at the commissary but they also have apple and mesquite. Have never tried mesquite.
