Blues also better if you avoid the dark meat. How do you do the salt water bleed?

Just cut across above the gills and and put the fish head first into a pickle bucket full of salt water. Give it about ten minutes and clean and skin, wonderful meat. If you can’t eat within 12 hours or so don’t bother, throw them back.
