Very happy with the 2 Dexter Sani-safe knives I just got. 9 inch fillet and 8 inch butcher for the tough fish. Not cheap, but like someone on the forum said, every fishing boat in New Bedford has a Dexter onboard. Thats what we used to fillet dover et al sole in California. High carbon wood handle Dexter Russell.
I had a fixed blade Buck back in the 70's that could not be sharpened. Had a lots of guys take it home and tried - no one ever succeeded. I traded it to the King of Enewetok for a sleeping bag and a little brown friend. He was very happy. I did my best to make her happy.

Most buck knives are very hard to sharpen and loose an edge really fast. Don’t make sense to me. I’ve had several. All with the same problem. Hard to sharpen easy to dull.
Something about that steel that you can hammer thru a bolt. Yeah if you buy a Buck don't go thinking you're gonna be shavin with it.
Had the same problem with sharpening. Got into Travis Air Base in California and had to check it. Totally forgot about it and left without it. Now somebody else is going to be frustrated same as I was.
I use a knife made in Finland by J. Marttiini. have filet'd & skinned 40-50 white bass with no problems. Some around Sandusky Bay/Cedar Point OH prefer them to perch !
