The cooking of pac.nw. dungeoness crab

I have cooked my share of this crab. Spot Shrimp.& king crab. I use salt water right out of the water they all live in. If you cook these in fresh water you will have crab that in my opinion is tasteless. Also I add paprika gives the shell of the crap a very red look. Once you have crab cooked this way you will do this all the time! The Ricky Sitka.

If you steam them ( 20 minutes) you will NOT leach the fat or salt out of them. If you boil them in Bay Water it will still boil a lot of their flavor out but salt content will remain. There are so many ways to prepare crab. My buddy boils them in Bay Water then Dips them in cold bay water.

I prefer Steamed the most. The salt and flavor content is NOT effected because steam only cooks them without boiling the flavors out of the shells.

The technique of boiling them in Bay Water then dipping them in fresh unboiled Bay Water ( my Buddy’s way) seems gross to me because the cold unboiled bay water is unsanitary and has things no one should ingest in it.

I agree 100% that boiling them in plain water will leach salt and flavor out of the shells.

All crabs/ lobsters,crawfish can be cooked in salt water either sea water or salted water ( no iodine)bring to a rolling boil , enough to fully cover, put them in( i f you don't like hearing them scratch, put them in the freezer while you wait for the water to boil). bring to a second rolling boil cook for 2 mns( people tend to waaaaaay overcook). take them out after 2 mins let them set till you can handle them. Enjoy !!! Season on yer plate, not every one likes seafood "cajun hot".

Your both have been cooking crab the right way. When we cook on the beach we also use the bay water to cool the crab. If you have ever cooked king crab it is sooo rich when it comes out of the hot water its too rich to eat till it cools off. I have also cooked them whole and cleaned I can not tell the difference in taste. If you cook them whole it makes your cooking water pretty nasty. Also you need a very big cooking pot to cook large king crab whole. The Ricky Sitka

Dungenous,Crab: 1: Lg.Pot filled,3/4 with water
2: 2 Tablespoons’ Kosher salt
3: 1 thin ring of Lemon
4: 1Tablespoon “Old Bay”
5: 2 Tablespoons’ butter
6: Bring to rolling boil, add crab or shrimp or what ever.
Cook til done and enjoy. TSIG, Yum,Yum. (That Shit is Good)

When red lobster would have their sale of crabs, usually King, Snow, Dungeness and one that started with a B. I just can't remember.
The only one I could tell the difference in was the King. I ordered the crab special hopeing to be able to taste the difference. One is suppose to be sweeter.

I much prefer to remove the shell and guts before boiling. You don't cook a fish with the guts still in, you don't cook a chicken guts feathers and all, the first thing a responsible hunter does is dress out his deer or elk, why cook a crab with it's guts still in. This may not be a popular way for the purists but I have done it both ways and I prefer the "cleaner" taste of a gutless dungeness crab.
