Cubsfan: Man, you live in an area of some of the best fishing in the country. Now you are asking how to cook and prepare Mullet? That is bait. Use a cast net, catch some and use those to catch a Legal redfish. That way you have reduced the mullet population and have a much better meal from the redfish. Of course I am prejudiced! Robert, I'm a fan of yours, bought your book and I am enjoying. You have been around and seen a lot! However, evidently you have not had fresh fried Florida Mullet! Beats Redfish hands down!

Don’t fry them. They are so much better smoked! Take the head off cut the backbone out and lay them open
butterfly style. Wash them out good and leave the scales right on. Use butter spray and paprika, fire up the grill or smoker and give them about an hour. Add a little salt to taste and cocktail sauce if you like when they are done. Enjoy!

RJFCO: Yes, I am completely ignorant about fried or smoked mullet. Thanks for correcting me. Reminds me of a conversation I had with a lady manacurist here in Houston probably 20 years ago. She said she would never starve if a disaster struck. I asked her what she would do. and she said 1. if anyone had a cast net, there were plenty of mullet in the bays. Also, how she would trap pigeons with a box trap. Just Sayin...RJS

I don't know a thing about mullet. Somebody on here was asking about them once before and said they are vegetarians. So are opaleye, which I have fished for and caught on the west coast - we used frozen peas, and I suggested trying those. He said he would, and I've never heard back. So I suggest again - try frozen peas. Let me know if you have any luck.

I like a little hot sauce on them too. When I was a boy, my father told me that they used to catch them on earth worms in brackish water. Most people catch them in a net. I’ve heard of chumming them with oatmeal.
I much prefer them smoked to fried. They’re an oily fish, that does well in a smoker. Just pick the meat right out of the skin and eat. Delicious!
