So great looking and Im sure it will eat mighty good! Might try ‘maple sugar’ on it instead of syrup some time and see if you like it. Great work there - enjoy!

hey westcoaster...did you make it a dry smoke or moist? I cant tell just from pics.

Dry, used 2 cycles with hickory and one with cherry, plus lemon pepper in the brine and on top side just before placing in the smoker. I've tried all sorts of wood chips and combinations and this is my favorite. Next time I'm going to try adding red pepper flakes on some as someone suggested.

Hey this is my recipe . I made it up . No books or google . It works and it’s delicious . Try it and you’ll see . Cut in chunks and let it sit overnite in marinade then smoke it . Apply some honey and brown sugar 15 mins before pulling off smoke this willl crisp up the edges make it crunchy
