I have landed numerous large skate over the years and tried fixing them several times, including punching scallops out of the wings. I have heard their wings are quite good. Apparently after several attempts, I am bleeding them wrong, cleaning them wrong or cooking them wrong. My next attempt will be to skin them on sight and place in ice like I do sharks. I am always open to suggestions.

Their system is the same as sharks so handle them the same way

Thanks. Flytier Will do. Have you had them? If so, what did you think. I am a seafood lover. I will try most anything raw or cooked. I just had bullhead for the first time. I though it was better than the rainbow I landed at the same spot Monday. I soaked the trout and the bullhead four hours in a salt/milk brine I read about somewhere. They were to salty but other than that, very good. I will adjust the brine salt next time. No more bullheads getting tossed back. Hopefully, no more skate wings getting tossed back. There is a lot of potential meat on those wings.

Milk reduces game flavor. Salt shouldn’t be needed unless you want salt. Milk is used for wild game liver to reduce game flavor.

After cleaning/filleting my fish I wash them and put them in a bowl then sprinkle salt over the top and cover with water. Usually refrigerate overnight then rinse the salt off the fillets to cook or vacuum pack. The salt seems to draw any blood from the fillets and makes them firmer.

I've not eaten skate myself, most fish I catch swim on. I am aware of how to handle them from people that the do keep sharks and rays for food, and I just file it away in the back of my mind.

I also soak gator in buttermilk overnight and it turns out delicious. Have done catfish, Walleyes, trout, bass, wipers and with a little(ha ha - maybe more) hot sauce added to the buttermilk it makes for tasty eating. Flour or fine corn meal with salt and pepper, egg wash then dust them again and deep fry.

I love using buttermilk. Did pork chops Friday with it. The acid breaks down the tough fiber in the meat.

I've found skate wings to be just a whole lot of gristle and not much meat. Not worth the
trouble!
