I picked up a pack of Berkley gulp shrimp and minnows (because I prefer not to use live bait). I am planing on fishing in a canal that extends off the intercostal and I was wondering how I would rig them.

on a small jig head maybe 3/8 oz. I put the hook in their tail end and jig them as if they are moving away from the predator, apparently thats not too popular but thats how i do it. caught a weakfish like that last night so ...

I like lighter jigheads- 1/4, 1/8, 1/16 and if the water is shallow (<2 ft) I like 1/32. I like to fish it slow, popping it off the bottom. If pin perch or crabs are attacking it, I'll use a heavier jig and fish it a little faster.

You might also think about a shrimp lure already rigged with a lead attached.
I had one that caught a few really nice weakfish. (I lost it and never found another like it)
