Good eating, a little hard to clean. I found it easier to filet from the tail up. The knife rides up the rib cage. If you have a poaching pan and liquid crab boil, instant imitation lump crab meat.

From late last year. The flounder come in in numbers in late October through December. These were caught on a rod and reel. We also go out at night with a lantern and gig them.

Not only are you the sheepherder but you are the flounder rounder-up. That's great, Bucky, thanks for sharing.

Can you be more specific about the cleaning. I have clean a lot of rock sole and halibut but never tried from the back. On the larger sole I split the fillet like I clean a halibut. Thanks, RTKF

Instead of cutting from behind the gill plate and working towards the tail, start from the tail and work towards the head. The rib cage on a sheepshead is so hard the knife rides right up and bypasses it.
