Speckled trout AND white trout both freeze fine unless they’re not handled correctly from the time you catch them till when you freeze them.

All Fish and other Meat freeze well if completed properly.
Submerge in water and then freeze whatever you want to store in freezer.
Freezer burn is from the air or whatever gas is surrounding whatever you are storing in a frozen environment.
By submerging in water there is NO oxygen or other gas surrounding the meat or fish.
I have done this procedure and eaten fresh meat or fish many years later that tasted excellent with NO adverse effects on the meat or fish from freezing it.
