Here's a couple pictures of my smoker setup with the cats smoking away. Wife says if those things smell as bad as you don't DONT bring them in the house.!! Little does she know the kitchen is mine and they're already in. Ha ha. Yeah I know I get a little smokey but to me it's well worth it!
Looks good to me. Let's eat

I havenโt ever tried smoked catfish before I do all my salmon myself. I also do eels whenever my nephew drops them off to me I know once you brine the eels there not slippery anymore. Al I have to do with them is get them into the refrigerator, before the wife gives me a problem about what she considers snakes lol.
Them looks yummy. My wife tells me the same thing

Got the steelhead in smoking yesterday and the neighbor called and told me to stay inside because of social distancing. I asked what he was talking about. He said they smelled smoke and knew what it was so he was outside with his family having fish!! LOL!

Looking good thatโs making me hungry. You can just drop some off on the front door step Iโll get it that way we donโt get in trouble for violating the social distancing laws lol.

I'm partial to Millers. You don't have to come in the fish are vacuumed packed on the table on the front porch. Just leave the beer in the cooler under the table. 1 for 1

You never heard of the Big Green Egg
Gordon , its one of my favorite toys, THE BIG GREEN EGG. Its probably the most versatile oven in the world.grill smoke bake. yes bake. pies and pizza too. the table is all aluminum, ans stainless steele. with big casters. this is important because this cooker works on air flow. that's your thermostat.air in /air out over heat. you burn kiln dried wood. lump coal they call it. not charcoal. very popular now but itsactually a very old method of cooking called Kamoto . from japan. when a family member gets married its our signature gift. goglr your local dealer. until you eaten off agreen egg you don't know how tasty the food is. Funny thing is my first time was on an overnite tuna trip . most of the charters in orange beach al.have them on their boats.

Smoked fish is the best!
Love to smoke my trout and especially salmon.
I make a sweet style brine and let it marinate overnight in the fridge and then smoke it with apple wood from my apple tree's.
It'll have a nice glaze to it and comes out with a hint of a candy taste and not a salt lick.
I'll do it with trout and tuna as well.
Never seem to have left overs lol
