Any tips on keeping these buggers from eating my bait?

Nope. Closed because of neuro-whatever bacteria. And you can't bring them up on a hook and keep them even when it's open. Have to use a snare or a cage.

Maybe throw a 3 ounce sinker with a chicken leg in the area you’re fishing & hope they munch on that instead of your bait? Good luck, hope the season for them opens & you can just throw out a few traps.

That's not an awful idea. Hell if I tie a line on, I may even be able to bring them in that way once the season opens(as no hook is involved).

These crabs are caught through nothing but stubbornness. They simply won't let go of the bait, they're not hooked.

Maybe try a sort of modified santee cooper rig to keep the bait a bit off the bottom. I dont fish saltwater much but this rig keeps the turtles away from me for the most part when catfishing.

Oooooo! I like this, a lot! (Inspired by googling that rig) Maybe I could put the float at the end of the line, and put a sliding egg sinker(a big one, or maybe 2 normal ones) before all the hooks.

The only reason I can't use it as-is is because I need a heavy ass weight and to be able to feel even pretty small fish(a 3oz weight on that rig would make that impossible)

Might end up a tangled mess, but also it might work.

Edit: Oops, I accidentally was looking at the santee trolling rig. The one you mentioned is much closer.

Not at the moment (for Dungeness in general), but also never when brought up by a hook.

If you attach a small piece of cork or Styrofoam to the hook with the squid… it may keep the bait 2 or 3 feet off the bottom and out of reach of the crabs.

Remember you will need a good sinker to hold the bottom at the same time.
