Big question...
I understand most fish have great 'olfactory' senses.
IF they ARE very sensitive,how/what do we use to 'get rid of' these scents from our hands BEFORE we 'bait' the hooks...?

Good question! Add to that, sunscreen and gas smell on your hand from pumping up the gas tank. I carry liquid hand soap on my dash of the boat but is the soap smell more offensive to the fish than whatever other smells that you have on your hand? Let's hear it guys!
Summertime - I use mud / sand from the lake / river I am fishing. Just grab a handful and rub it into your skin. Ice fishing I use scents (Dr. Juice) on the bait to help cover my scent.
Baking soda is best to rid of smell.

My grandfather told me that they used WD 40 as an attractant.
I have been bass fishing for a lot of decades, and for the past several years I have been making my own lure scent made up of a small can of smoked anchovies and some of my wife's fish sauce mixed together in a spray bottle and spray it on my worms, swimbaits, and everything I throw. That's the very last thing I do before I cast. It makes one hellava of an attracter plus masks any human scent. I don't think the bass can detect anything other than that concoction, cause it's super fishy and I do believe the bass hang onto it longer too allowing me ample time to set the hook. Anyway, that's my take about scent.
I found that the best thing is to use the small eyeglass cleaning wipes. They are basically an alcohol soaked pad. It cleans your hands, ( also killing any germs) and evaporates without any smell in just a couple of minutes.
