I’ve done all these except I never use a electric knife I prefer my fish boneless and when my buddy does it always picking bones out of teeth what a pain !!!!!

This will be an all day debate because there is so many methods to do it. My was is very simple and very fast. I fillet the sides and leave the skin on and put in the freezer, done. I cook the fillets with skin on and season the non skin side, start cooking on non skin side to set in seasonings and flip over and finish with skin side down. When you transfer to the plate the meat will come right off the skin or you can even it the skin if you prefer. Roll up your fillets with the skin out and put in bags to freeze, the meat will last longer before freezer burn with this method as well.

My wife cleans them like a trout Are use the skins it It’s electric and it does a good job

after YOU SKIN THE CATFISH, here is a great way to make a cat fish stew.After fish is cleaned , stand each fish up around sides of large pot,hold their tales to side of pot with closepins. add all your ingredients when everything cooks down , remove tails bones and all.

My first jug line fishing trip we caught a lot of big cat fish. We took them to the cleaning area and they had a hanging rack. We hooked them on the rack and while hanging there cut off their tails. Once bled put them on the filet table and filet them from the tail to the ribs. Cut around the ribs, back towards the head then out. Flipped the filet over and filet skin from from the meat. Then cut out the bloodline leaving only two white boneless fillets. The fillets were most of the time are cut in to chunks. Flip the fish over and do the same thing on the other side. The fish are stored in water in zip lock bags for later consumption. YUM! YUM!

I catch a lot of catfish, blues, flatheads, and channels. Many people suggest driving a nail through the head or drilling a hole through the head, hanging the catfish and skinning the fish- - -before filleting it. For me this is way to labor and time intensive. I use a stiff bladed sharp fillet knife---There are several places to buy these like Costco, Sam's, BJ's wholesale foods, Memphis Net and Twine, and numerous suppliers on the internet. These are just the white handled knives that chefs and kitchens use- -nothing expensive or elaborate. Then I simply cut the fillets off the catfish just like you would any other fish. I put the fillets in a pan of water, for later. NOW for large catfish, the belly meat is excellent. Cut this off and put into the pan of water also. Be careful not to cut the yellow sack inside the fish. After the filets are cut off, I use an electric knife to remove the meat from the skin. You will need to do both sides of the belly meat. Simply insert the electric knife, hold it a little off the skin, and push the knife as you pull the skin. You get a nice white fillet. One more step: I don't like the fishy taste. So if you take each fillet and use the same knife that you cut the fillets off with, take out the lateral line or the blood line of red meat. This will greatly improve the taste. The I wash the fillets twice, to remove any blood. Put them in zip lock bags, fill with water, seal the bags while squeezing out the extra water and/or air. Freeze and enjoy later. ***You could use the electric knife for all these steps; however, I have found that cutting the original fillets off the fish, you hit a number of bones. This will dull the blades on the electric knife pretty quickly. Using the other knife, with a stiff flex blade, it is much easier to sharpen them. Hope that this helps.

I have caught my share catfish in my years. From salt water cats in places some people had no idea that they were there, to all types of freashwater cats , using only 1 bait.
One time my brother in law calls me up one night about 35 years ago, I lived in Phila. PA at the time., to go fishing on the Delaware river, nothing was open to buy bait, so I started to look around to see what I could come up with, and there it was in front of me the whole time HARD SALAMI. It worked like a charm. I have profected this to a science. First it works best on moving water although you can use it on a lake, decide where you're going to fish about 15 feet upstream from where your fishing throw a few pieces of salami in the water near the bank now go back on to your spot where you were going to fish put salami on the hook and wait for the magic to happen it's the best thing you'll ever use for catfish happy eating wake and bake ps also great for little ones to learn with because they won't get bored they will be having a ball sorry you won't be doing much fishing because you will be to busy servicing the child lol. WAKE AND BAKE
