Live bluegills for flatheads
I have found they eat them like popcorn. Not legal in California - can't use sport fish for bait and bluegill are considered a sport fish, as they should be. But then we don't have many flatheads in California. Mostly channels and I have caught a (very) few whites.
I will go with the majority and try chicken livers, Thanks Y'all for the advice!
A tip CDB - buy a pair of panty hose and cut out some patches, wrap a patch around a liver and tie it shut with thread or fishing line. Stays on the hook better and makes it harder for the little ones to get to it. You could buy cheesecloth, but panty hose are much cheaper.
I just recently caught an 8# Channel cat on a “Gulp” 2-3” minnow rigged swim bait style. Water was 50* and depth 30ft on a channel ledge drifting with the wind. Good luck!
If I can survive the embarrassment of being a man buying those.
Just throw a bucket of stink bait up there with em. Or the livers. You won't be the first.
I HAVE USED DEAD AMERICAN EELS IN THE CT RIVER AND HAVE SOME NICE CATS

Yellow or chartreuse three inch curly tail grub. A guy caught two flatheads one after the other at a spillway. I was there when he caught the second one and just missed seeing him release the first one. Several people vouched for him catching two. Curly tail grub. Knew it was common to use around here in winter for channels...but these were flatheads. One weighed 32lbs and other 34lbs.
If I want to catch numbers of channels I use punch or sponge bait. If I want big ones I use live or cut bait.
I’ve been cat fishing for years. My best luck in catching cats are turkey livers. They also, stay on your hook much better than chicken livers and don’t fall apart as easy. Just cut your size, hook, cast and wait.
Wonder what the price difference is? and where do you buy it?
Cut bait, live crickets, chicken livers anything that stinks
