I’m sure there are a thousand ways to skin a Cat!
I nail the heads to a 2x4,
Cut behind the head.peel a little skinback
Grab with visegrips and pull and peel.
Then
I decide if I want to Fillet and batter or bbq in
Foil as is.
What’s your technique?

First if they are still alive when you get home, put them in a washtub and fill it with the hose. Leave them frr 2-3 hours and they will clean themselves. Now they won't taste lie the water they were caught in. I use a washtub because the wife wont let me use the bathtub.LOL

Even Filleted you will still taste the favor of the water in the meat. If it is a lake take a sip of the water. If you don't like the taste of the water you won't like the taste of the catfish.

Big Catfish can be fileted just like a perch with an electric knife. It is a little harder to get through the rib bones, but it works great. Cut down to the tail flip the fellet over and using the electric knife still; take the skin off. Then it is easy to finish the rib bones with a sharp fellet knife. Totally boneless in about one minute.

I fillet all fish, just like Fast Randy, no skinning, no de-scaling, no gutting. Fast and alot easier!! Tight lines everyone!!!

We had some Japanese exchange student stay with us for a week 10 yrs ago.
Took them fishing for cats at night.
Caught 2 Med size
I put them in a pail and next morning I couldn’t believe how much mud and bits of fine grass they puked out.
I peeled them skewered them bbq them.
Japanese kids ate every last bit!

Now is a good time to find a cheap Black & Decker electric knife for around $10.00. You don't need the curved fish type.

Bed bath and beyond have electric knives but with a round tip.

Usually year round cheap.

They do not come out easy and cause some kinda bad infection.

Uncle dropped one on the top of his foot had to cut his boot off and his foot got big and red.

A buddy got one in the palm of his hand just under his thumb cut the fish off and took him the buddy to the ER.

Put your hand at the tail and slide it up towards the head. The spikes with now stick out and you can slide your hand under them to hold it. It is a reflex for the fish as it thinks something is going to eat it. Now you can't get stuck by it. Learned that when I was in my teens, ie a long long time a go.
