Umm...for salmon, you want to clean it good. Lots of steps involved here, so research that. Once cleaned and bled out, my favorite way to cook fresh salmon is simplicity: place your filet in a large square of aluminum foil, enough so that you can cover and wrap the entire filet. Top the salmon with salt/pepper, olive oil, 2 or 3 lemons squeezed on top. You can slice the squeezed lemons and place some rounds on the top of that. Seal up the foil all around the salmon and grill for 15 minutes or until you start seeing a little white fat leaking through the meat.
Another good way to do salmon is similar in preparation as above, but instead of foil, you get a cedar plank and grill the salmon right on the plank. The plank slowly smolders on the grill and gives a smokey flavor to the fish.

Cook it. That is the “safe” answer. Or are you talking what can you do to eat it raw? Or are you asking if you must gut a fish before eating it? If you aren’t afraid of parasites, bacteria, or fish herpes, you can eat any part of the fish and be “safe” for at least half an hour before Aquaman comes for you.

You want to safely eat it on the boat? Safe how? You don't want to fall in? You don't want to get worms or mercury poisoning? 1. Knock it in the head and chow down.Salmon sashimi is delicious. I've never had raw striper, but I don't see why not. A little soy sauce and wasabi? I'd try it. 2. Out of a lake? Don't eat it. It's not safe, not where I live.
What's the dif in eating on boat vs home? Clean, cook, eat. Get another one.
You are not allowed to catch and filet a striped bass on a boat. It must be whole to determine the required minimum size or you will get a citation. So, keep it on ice until you get into the dock.

Say What? I understand the reasoning Pg, but where is this written?
In Ontario and Quebec we'd cook what ever we caught by beaching our craft, building a fire SAFELY after cleaning and filleting the critter X mouths to feed and wetting one or more paddles to clean them then using the paddles for plates and have our "shore lunch" that we referred to as "PIKE ON A PADDLE" no matter what the critter was, Jer
A little wasabi and soy sauce is all you need
I do like to chill the fillet a little before eating it but you don't have to. Good catching and eating
Cook away from the GAS TANK
Fillet with an electric knife, it's the safest way. Maybe a pair of chain link gloves to boot.
