This is a fish I caught yesterday and a half hour fishing trip after work. In a pond I call my Academy pond. It has been producing very well for me.
Yes. It is a flathead.. looks like you got him on a jig too... they're fattening up getting ready for hibernation right now too..

I released that fish. I release most of my fish. I keep all my saltwater fish for eating but I do like catfish. But if I want catfish for dinner I know where to go catch them right away.
Which one is truly the best-tasting? Since I'm originally from the northeast, we caught/ate mostly bullheads (horned pout), which were pretty tasty ! Traveling along the I-40 towards Arizona some years back, I tried blackened catfish in a restaurant in Jackson,Tenn.; it was very good, but I have no idea which one they served ! Have yet to catch one here (Az.), but looking forward to
it; no blues here, though, just channels and flatheads ! Just wondering about other opinions amongst our Forum friends !
That is a beautiful cat, you can freeze the fillets,I usually cut them into smaller pieces, like chunks, easier to eat. And fill a quart freezer baggie and put a teaspoon or so iodiozed table salt and fill with water, freeze and year later we taste like they did the day you caught it. Just make sure there is no air space
Nice cat. IMO flatheads are the best tasting. They are not garbage feeders like other catfish, they eat live things! Oh the catfish you ate in Jackson TN was most likely farm raised channel catfish. I’m in TN and have caught channel and flathead from the same water. Wife said throw all channel back, but keep the flatheads after comparing them! Smart Lady, she was!

and farm raised nothing has the flavor of wild caught.
Takes alot of years for them to get big. It's good I think that you released him. Channels are good to eat.
