Bucky Buckner, The Filets were from the large Butt. I gave the other to my younger bro. Probably Pink from one side and white from the bottom. since it was my first time catching these good fighters I didn't even know about bleeding until I got home and watched youtube videos on how to filet when I also came upon a video about bleeding... Now I do and the next time I will have to do that.. .Does it make a difference in taste?

Yes, bled and iced fish 🐟 taste the best.

If I have an ice chest handy, I'll bleed them out before tossing them in.
If I don't, I put them on a stringer when there's no seals around or my dive bag if there are. Sometimes (always with big ones), I'll hogtie them to keep them from thrashing around when I pull them up for long hauls back to the launch. See picture below--bought both at dive shops.
As far as taste goes, it doesn't really matter. When I used to shoot them in the head (spearfishing), I never bled them (didn't want to attack sharks) and some of the meat would pink but turned white when it was cooked.
Since I haven't seen it posted this year, here's an important safety reminder. Do NOT stick your fingers in the 'buts mouth. My dive buddy made this mistake only to be rewarded with a bite that went through his thumbnail and out the other side (plus a tetanus shot).

For fish that overheat while fighting (e.g. tuna, big stripers, etc), it makes a huge difference.
Since CA halibut usually only give a quick run when first hooked, it doesn't matter all that much. (See my last post just above)

I've never Eaton Halibut, but bleeding certain fish such as, bluefish, tuna, grouper, among others makes a big difference in taste and color.

When I can I bleed all my fish, I believe it makes a different in taste
