I live in Maryland and around me I've got a lot of choices from ponds to lakes to ocean. I like all fish around to eat . best fish would have to be trout and rock fish

In the Columbia River Spring Chinook are impossible to beat. Steelhead from the river in my back yard is always fantastic on the Traeger Grill.
In the salt of the Pacific Ocean my favorites are Dungeness Crab, Ling Cod and Halibut in that order.

East Texas Mostly if it swims I like to eat it but the best is either Flathead Catfish or big bull bluegills fried.

Paddlefish is pretty darn good
If u can get a permit
I like mine fried or in tinfoil with a dollop of butter cooked in the oven or open campfire
