Albacore on turkey day CA

Got fish Loc: Petaluma
 
Not really a fishing report but dumped turkey day to can my albacore for the winter. Finished with about 120 jars! Nothing better than hanging out with family and filling the pantry.

I’m just curious. What do you add to the jars when canning the Albacore. Thanks for the photos 😎👍

I’d have to check since it’s at my dads but I’ll look and let ya know next time I’m up there. It’ll hold 36 jars at a time which is nice!

That’s some sweet looking fish Fish I never realized all the good stuff I’ve never experienced till I started following y’all’s post. Thankful for what I have but can’t help thinking dang I’m missing out on a lot 🇺🇸🐠on

Nice story and photo spread of your canning process! Sure is great to be in control of all the final steps after "catching" the fish!

I never put anything in my jars except hard packed Albacore. Even if you put little small pieces in jar, when they finish it will be one solid chunk! Flavor so much better than most you can buy like Starkist, or Chicken of the sea etc because most pre cook the tuna then put in can with either water or oil. Consumers Reports and Country test Kitchen did a taste test of canned tuna and the ones that tasted best and were much more expensive were ones canned like this one where the fish is cooked/canned in it's own juices.

Are you sure about 36 jars? That is huge! My largest Pressure Canner, Presto, 23 qt only holds 7 quarts, 20 Pints or 24 half pints?

Look like the one without clamp down knobs around the perimiter and guage is a Presto (I have 4) and the one with knobs is a All American.

My bad I see an American that holds 31 pints and is twice as large as the others, Man that would be heavy! It is 41 qt capacity and holds 20 qts, 31 pints and and weighs 33 pounds without anything in it.

The albacore half teaspoon of olive oil and 1/4 teaspoon of salt. I try to keep it simple. In the past I’ve added rosemary to some jars and raw garlic. They were good but I like the oil/salt the best.

Nope I was wrong. My uncle has a the bigger canner. The one we use will do 3 rows stacked 18 per stack. Still quite a bit of fish tho.
