Sounds Good, I'm thinking sautéed mushrooms, asparagus, and summer squash. Jasmine rice : perfect.
My mouth is actually watering just imagining it.

I did them once, put the scallops in a bird nest of julienned zucchini, carrots and parsnips very lightly salted in garlic, olive oil and butter and lemon juice.
