Why does bait slide up the line when you hook a fish?

I'm assuming this is a T-rigged soft plastic on an unpegged hook and not a jig. So I'm guessing when a fish gets hooked and whips its head about, the lure has no where else to go but the path of least resistance which is up the line.

Tie a line to a chair. Take the hook end with the bait you are referring to. Stretch the line and shake it back and forth. You will see the bait go up the line. Live action is even better than a picture which is worth a thousand words. If you don't understand the last sentence, no worries. Just do it and you will get your answer in living color.
