I've seen some beautiful saltwater fish mounts from Global Fish Mounts. They also do freshwater fish.

Personally I would go with a reputable taxidermist in your area than an company you can simply order online from. The taxidermist will use measurements you give him along with painting it to match the individual fish in your photos making it much more personal.
