Dads brittle recipe.
Cook on a gas stove in a nine inch cast iron skillet using a good candy thermometer.
1 c light corn syrup ( cheap)
1 c water
2 c sugar
Pinch Salt
Mix these together in skillet, put in water and corn syrup then sugar and salt.
Cook to 235 degrees then add RAW nuts, peanuts, pecans, walnuts...
If using nuts from a can don't put it until it reaches 270 degrees.
cook to 290 degrees. (For canned nuts don't add pinch of salt and stir constantly.)
Add heaping teaspoon of Margarine, then stir in half teaspoon of baking soda, it will boil up.
Pour out onto aluminum foil and allow to cool. Break and eat.

I think my father was a dentist growing up. Grew up in the local dentist chair what seemed like monthly. Dentist even smoked while working on me. He was receptionist, hygienist, bill collector, and dentist all in the basement. Never did get a tooth brush when he was done. But Probably a good dose of lung cancer.

Stale donut took out my front two teeth. I was the poster child for all I want for Christmas is my two front teeth. Worse part was that I was in High School. Laughed at, is to put it mildly.
Sounds good but i'am diabetic and the holidays are coming up.
I remember making that recipe from years back. I love brittle and happen to have two pecan trees in my front yard. The only problem is my days for the last month have been from 0700 to 0200-0300 daily non stop and a few days I got a ten minute lunch and maybe a few minute super. I got to quit early tonight, it's 0200 CST.
